Persian Butternut Squash with Saffron (Dessert recipe)

1 large butternut squash, peeled and sliced 1/2 inch thick
1/2 teaspoon crushed saffron infused with ice or hot water
2 tablespoons butter
1/2 cup sugar or any other natural sweetener like grape and date syrup
1/2 cup Water
How to make Saffron ButternutSquash?
In a large skillet, heat butter over medium heat. Add butternut squash slices to the pan. Cook for 5 to 7 minutes or until tender. In a small saucepan over medium heat, combine sugar and half a cup of water. Bring to a boil. Reduce the heat and simmer for another 5 minutes.
Arrange the butternut squash slices in a large saucepan, pour in the syrup and saffron evenly. Bring it to a boil, reduce the heat to medium, leave the lid ajar and cook for 20-30 minutes or until the butternut squash is tender and all the syrup is absorbed.
Serve on a serving dish and garnish with pistachios and rose petals. Enjoy!
