Saffron gives an incredible taste and aroma to any recipe. Saffron poached pears, an extraordinary recipe from Shahrzad Zardoost, an Iranian chief, and event organizer in Switzerland, is mouth-watering. We recommend you to use this recipe to make a good saffron dessert for our next gathering.
1. Place the saffron, sugar, and salt in a bowl and crush with a spoon.
2. Add a quarter cup of boiled water and set aside for 15 minutes.
3. Place the saffron water and all the ingredients except pears in a saucepan.
4. Bring the liquid to a simmer, peel the pears and then place them into the poaching liquid.
5. Poach for 20 minutes and rotate them every 5 minutes so they poach evenly. Let them cool down in the poaching liquid.
6. You can either serve them now or leave the poaching liquid in the fridge overnight to absorb more of the flavor.
7. Before serving, remove the pears from the saucepan.
8. Strain the poaching liquid to remove orange peel and cardamom.
9. Bring the poaching liquid to boil and cook until it becomes syrupy.
10. Serve the pears on a plate, brush with little syrup. Pour a little syrup over individual pears and serve with some Greek yogurt sprinkled with granola. Enjoy!
